Ingredients

  • 60g melted butter
  • 1 cup full cream milk
  • 3 cobs Mulgowie sweet corn, kernels removed
  • 2 eggs lightly beaten
  • 2 strips bacon diced and fried
  • 1/2 cup grated cheese
  • 1 1/4 cups self-raising flour
  • 1 1/2 tablespoons oil
  • Salt
  • 3 teaspoons soy sauce

Method

Combine the butter, milk and corn kernels. Stir in the eggs, bacon and grated cheese. Sift the flour and add salt to taste. Heat oil in a large frypan and drop spoonfuls of the mixture into the pan. Cook until the base is golden and then flip to cook the other side. Serve a stack of fritters with a spoonful of tomato salsa on top.
