Ingredients

  • 1/3 cup flour
  • 1 1/2 cups milk, or 1/2 milk and 1/2 cream
  • 3 eggs
  • salt and pepper
  • 1 tablespoon chopped fresh herbs, or 3/4 teaspoon dried mixed herbs
  • 2-3 slices cooked bacon or ham, finely chopped
  • 2 shallots, finely chopped
  • 1 cup cheese
  • Kernels from 1 cob Mulgowie corn
  • 1 Mulgowie broccoli, cut into small pieces, parboiled & drained
  • 12 Mulgowie beans, cut into small pieces, parboiled & drained
  • Extra cheese for topping

Method

Beat eggs with milk and flour to a smooth batter. Add salt, pepper and herbs. Brush a shallow oven dish with oil or melted butter. Evenly spread the broccoli, shallots and cheese, then carefully pour in the milk and egg mixture. Evenly scatter extra cheese on top. Cook in medium oven for 45 minutes until golden brown on top.
